Muffins always remind me of a nursery rhyme learnt as a kid…..‘Do you know the muffin man the muffin, the muffin man……”A delightful rhyme of British origin written in 1820 and still preserved in Bodleian Library University of Oxford. Like all medieval British rhymes the “muffin man” speaks about daily happenings in England. Healthy meals were expensive, so the Victorian peasants who spent the entire week on long hours of work had only a Sunday free. That didn’t leave them much time for cooking! Few had kitchens and many had to cook their food on an open fireplace, which was hot and smoky. People chose to buy their food from the wide variety of street sellers and Muffin man was one of them since they preferred the bulky bread and muffins to fill them up.
When I rewind I wonder …I learnt this poem when I never even knew what a muffin was! It was just rote learning and sing-along was the trend. Today the learning scenario has changed. We talk about contextualisation and Machili and Laddus have replaced hot cross buns and muffins. London Bridge is now Tunga Bridge and Pooja puts the kettle on. Rhymes aside weekends are for baking and this week it was Muffin weekend with my grandson. Yes, he knows what’s a muffin and demands blueberry muffins. Is this what’s a generation gap? Anyway, the smart Paati that I am, I changed the blueberry to a simple carrot muffin and a basic vanilla.

CARROT MUFFINS EGGLESS
Ingredients for Carrot Muffins Eggless:
- Plain flour/Maida 1 & 1/4 C
- Curd 1 C
- Grated carrot ¾ C
- Sugar ¾ C
- Oil 1/2 C
- Baking powder 1 tsp
- Baking soda ½ tsp
- Vanilla extract 1 tsp
- Cinnamon powder ¼ tsp
Preparation Method for Carrot Muffins Eggless:
- Sift all dry ingredients except sugar into a bowl.
- Beat/whisk sugar, curd and oil till dissolved.
- Add the dry ingredients to the wet and mix till well blended.
- Pour into greased muffin mould and bake at 180 degrees centigrade for 20 minutes or till a knife comes out clean.

VANILLA EGGLESS MUFFINS
Ingredients for Vanilla Eggless Muffins:
- Maida ¾ C
- Baking Powder ½ Tsp
- Baking Soda ¼ Tsp
- Sugar ½ C
- Curd ½ C
- Oil ¼ C
- Vanilla Extract ½ Tsp
Preparation Method for Vanilla Eggless Muffins:
- Whisk curd, oil, and vanilla till well blended.
- Sift all dry ingredients.
- Mix all till combined.
- Pour into muffin moulds and bake at 180 degrees centigrade for 20 minutes.
